The Franciscans, who looked after up to 80,000 pilgrims in Werthenstein in the best pilgrimage years of the 18th century, enjoyed local cheese with the wine, which was supplied to them from Alsace by the legendary Sulzigjoggeli. Jakob Schmidlin, called Sulzigjoggeli, was sentenced to death in 1747 for heresy, strangled and burned, the Franciscan monastery was abolished in 1838, but the wonderful Chlistei cheese is still available today in its old freshness, to go with wine, cider or simply in between.

Albert Schöpfer, who grew up on a farm, completed his apprenticeship as a cheesemaker in 1981. Since then, the cheese-making profession has never left him.

Silvio Schöpfer completed his apprenticeship as a dairy technologist in 2006. He has been working in the family business since 2016.

Since 2009, the cheese dairy has been run by them, the Schöpfer family. They are a classic family business. Father Albert and son Silvio process the milk, take care of the cheese and are responsible for sales. Mother Margrith is responsible for the administration.
