The full moon cheese was born with regard to the passion for fine red wine. The family found a way to make and care for this cheese so that the balance of cheese and wine, after aging, is perfect.
The fine and slightly dominant red wine note can be smelled from a distance. The red wine combined with the creamy-fine cheese dough, promises a palate experience of the special class.
The full Moon cheese got its name because on that evening, when they tasted the cheese for the first time, it was a full moon night. From that moment on, it was clear to them that this was the name of the cheese.

Albert Schöpfer, who grew up on a farm, completed his apprenticeship as a cheesemaker in 1981. Since then, the cheese-making profession has never left him.

Silvio Schöpfer completed his apprenticeship as a dairy technologist in 2006. He has been working in the family business since 2016.

Since 2009, the cheese dairy has been run by them, the Schöpfer family. They are a classic family business. Father Albert and son Silvio process the milk, take care of the cheese and are responsible for sales. Mother Margrith is responsible for the administration.
