Le Gruyère AOP in the maturity grade “mild" is matured for 6 months, which gives the cheese a fine, pleasant note. In 1993, the then pure Sbrinz cheese dairy in Walde was taken over by cheesemaker Samuel Trachsel and has since been steadily operated and developed. 14 years later (May 2007), the cheese dairy in the neighboring village of Gebertingen was taken over. Thanks to these two operations, Käserei Trachsel AG is in the unique position of being able to produce the highest quality cheese of several varieties in a unique mountain landscape of Eastern Switzerland. A medium-sized and innovative cheese dairy business, settled and locally well anchored in the St.Gallen villages of Walde and Gebertingen.
